It was difficult to handle as well as to watch. A single mother of three, she was determined to do better for her children. After years of taking nutrition classes and reading everything she could find about healthy diets, Catherine changed her life by switching her diet to one consisting of whole plant foods. She wants you to discover its benefits too. She wrote a beginner vegan and plant-based cookbook with delicious whole food plant-based and vegan recipes so her readers could benefit as well. Living a long life is great, but living a long, healthy life is awesome.
